6. Color: Pale green with dark green stripes at the mature-green stage. The fruits mature to yellow with greenish stripes and later turn orange with yellow stripes. The flesh is orange or bright orange in a cut.

7. Flavor Profile: A refreshing taste being sweet and slightly acidic. A pleasant flavor with a mild fruity aftertaste. The flesh is buttery and plum-like. The fruits are meaty.

8. Culinary Use: Perfect for bright salads, sauces, ketchup and paste. Ideal for canning.

Janet’s Jacinthe Jewel turned out to be a real wonder. The bushes were firm and very beautiful. They produced a lot of giant fruits but not very early. We began harvesting when it was due time for a mid-season variety. However, there were lots of green tomatoes on our bush in the middle of September. They were smooth and large. Ripe fruits were really amazing, especially in a cut.
